Freshly Charged California Burrito

What you will need:

  • 2 large whole wheat flour tortillas
  • 1/2 cup cooked brown rice
  • 1/2 cup cooked black beans, drained and rinsed if using canned
  • 1/2 cup corn
  • 1/3 cup shredded Cheddar or Monterey jack cheese
  • 1/2 cup shredded lettuce
  • 3 tablespoons minced red onion
  • 1/2 cup guacamole 
  • 1/2 cup salsa

What to do:

  1. Spread 2 Tbsp. guacamole in the center of a tortilla.
  2. Add half the rice, beans, cheese, corn, lettuce, salsa and onions on top. Roll into a burrito. 
  3. Spray a grill grill pan and heat on low. Place burritios on pan at low heat and cook for 3 to 5 minutes on each side. 
  4. Serve with a side of salsa or guacamole.
