What to do:
- Preheat oven to 400 degrees F.
- Heat a skillet on medium-high. Place ground turkey into skillet, breaking up into pieces until fully separated. Cook through. Set aside.
- Coat a 9-by-13-inch baking dish with cooking spray.
- Place shredded zucchini in the center of a clean kitchen towel and wring out the excess moisture. Transfer to a bowl and combine with eggs, onion, Parmesan and flour.
- Pour the mixture into the prepared baking dish and spread into an even layer. Top with cooked ground turkey
- Bake for about 30 minutes, or until set and beginning to brown around the edges.
- Cut using a pizza cutter or knife into 6 equal squares. Use a spatula to scoop slices out.
- Serve and enjoy!
