What to do:

Meatballs

  1. Preheat oven to 375°F
  2. Crack 2 large eggs into a bowl
  3. Add ground turkey to a separate large mixing bowl
  4. Mince onion and garlic
  5. Oil baking sheet
  6. Sauté onions and garlic in stock pot over medium heat in olive oil (until cooked ~3-5 minutes)

Note: You can sauté all the garlic and onion in one pot, then put half into the meatball mix and leave the other for the sauce

  1. Combine all ingredients into meat mix (spices, egg, cooked onion and garlic, breadcrumbs)
  2. Mix well. Store in fridge to let meat set, up to one day
  3. Scoop 1 oz. balls onto baking sheet and place in oven
  4. Roast in oven for 40-45 minutes, check after 30-35 min to see how they look, take out of oven and add to sauce

Sauce

  1. Heat saucepan on medium high with olive oil and garlic. Sauté until onions and garlic are tender ~ 2-3 minutes
  2. Add tomato sauce and paste, stir to combine. Add sugar, salt and pepper. Turn down to low and simmer
  3. Add meatballs and cook meatballs in sauce until serving (sauce can simmer for a couple of hours on stove, you may have to add water if sauce thickens too much)
  4. Garnish with grated parmesan and torn fresh basil

  • 2 lbs. ground turkey
  • 2 large eggs
  • 1 cup breadcrumbs
  • 1 tsp salt
  • ½ tsp black pepper
  • 3 garlic cloves
  • ¼ cup grated parmesan cheese
  • Small diced onion
  • 56 oz tomato sauce (2 large cans)
  • 5 oz tomato paste (1 small can)
  • 1 tbsp brown sugar
  • Salt and pepper to taste
  • Grated parmesan
  • Fresh basil
