What to do:

  1. In a large bowl mix olive oil, vinegar, garlic, dried basil, salt and pepper. Marinade chicken for 30 minutes or overnight. Store the rest for your pasta salad dressing.
  2. Preheat your grill to the highest setting. Grill for 6 minutes on each side, or until temperature reaches 165 degrees Fahrenheit.
  3. While chicken is marinading/cooking, cut tomatoes, mozzarella, basil and cook pasta
  4. In a large bowl mix pasta, tomatoes. mozzarella, basil, chicken, dressing and serve

Chicken Marindae

  • 1lb. chicken breast, fat trimmed
  • ¾ cup extra virgin olive oil
  • 1/3 cup balsamic vinegar
  • 2 tsp. minced garlic
  • 1 tsp. dried basil
  • Pinch of salt and pepper

 

Assemble Bowl

  • 1lb. whole wheat pasta, precooked
  • 12 to 16 ounces of cherry tomatoes, cut in half
  • 8 ounces of fresh mozzarella, chopped
  • 2/3 cup basil leaves, chopped
