What to do:

  1. Place a large pot over medium-high heat and add oil to the pot.
  2. Add turkey and cook, stirring occasionallu until it starts to brown then add in chopped bell peppers and cook another 3 minutes.
  3. Add in the chopped tomatoes, tomato sauce, coconut milk, water, pasta and spices and stir to combine.
  4. Turn the heat up to high and bring to a boil cooking for about 15 minutes from the time you add everything or unitl the pasta is cooking through.
  5. Season to taste as needed with any other desired seasonings.

What you will need:

  • 1 Tbsp. olive oil
  • 1 lb. ground turkey
  • 3 Tbsp. parsley, chopped
  • 2 bell pepper, chopped
  • 2 tomatoes, chopped
  • 1 can tomato sauce (14.5 ounce)
  • 1 Cup coconut milk, canned
  • 2 1/2 cups water
  • 1 box whole wheat pasta, fusilli
  • 2 Tbsp. curry powder
  • 1 tsp. garlic powder
