What to do:

  1. Preheat oven to 450°F. Line baking sheet with parchment paper.
  2. Use a sharp knife to remove stalks, fronds, and root end off fennel bulbs. Slice bulbs into quarters. Remove core from each quarter and peel apart the layers. Rinse thoroughly and pat dry. Then slice fennel layers thinly, lengthwise.
  3. In a large bowl, toss green beans, fennels, and fronds with oil, garlic, onion powder, red pepper flakes, salt, & pepper. Coat evenly.
  4. Transfer beans and fennel mixture to baking pan lined with parchment paper or baking dish. Bake for 12 minutes. Remove from oven and top with cheese and bake for another 10-15 minutes or until veggies are cooked and cheese melts or turned golden brown.
  5. Garnish with additional fronds and serve!
