What to do:

  1. Preheat oven to 350°F.  
  2. Combine oats, ground flaxseed, salt, and spices in a large bowl.
  3. In a large bowl, whisk together eggs, apple sauce, maple syrup, and melted coconut oil. Then add dried ingredients and mix well.
  4. Fold in diced apple, walnuts, and cranberries.
  5. Scoop ¼ cup batter onto parchment lined baking sheet. Flatten cookies slightly with bottom of measuring cup or palm of hand. Optional: Slightly press a walnut in the middle of each cookie.
  6. Bake for 15-20 minutes until cooked. Enjoy once cooled!
