What to do:
- Preheat oven to 350°F.
- Combine oats, ground flaxseed, salt, and spices in a large bowl.
- In a large bowl, whisk together eggs, apple sauce, maple syrup, and melted coconut oil. Then add dried ingredients and mix well.
- Fold in diced apple, walnuts, and cranberries.
- Scoop ¼ cup batter onto parchment lined baking sheet. Flatten cookies slightly with bottom of measuring cup or palm of hand. Optional: Slightly press a walnut in the middle of each cookie.
- Bake for 15-20 minutes until cooked. Enjoy once cooled!
