What you'll need:
  • 3 roma tomatoes, seeds removed and diced
  • 2 ripe avocados, diced
  • 1/3 cup red onion, diced
  • 1 can (15 ounce) no salt added black beans, rinsed and drained
  • 1 can (15 ounce) black eyed peas
  • 1 can (15 ounce) low sodium corn
  • 1 jalapeno pepper, diced
  • 1/3 cup cilantro, finely chopped

Dressing:

  • 1/3 cup extra virgin olive oil
  • 2 Tbsp lime juice
  • 2 Tbsp red wine vinegar
  • Garlic powder, salt, and pepper to taste
What to do:
  1. After dicing all vegetables and rinsing all canned vegetables, combine ingredients in a large bowl and toss well.
  2. In a separate bowl, whisk all dressing ingredients
  3. Pour dressing over salad ingredients and mix. For more flavor, let sit in the fridge for an hour before serving (optional)
  4. Serve with whole wheat tortilla chips or as a side dish and enjoy!
