What you'll need:
- 3 roma tomatoes, seeds removed and diced
- 2 ripe avocados, diced
- 1/3 cup red onion, diced
- 1 can (15 ounce) no salt added black beans, rinsed and drained
- 1 can (15 ounce) black eyed peas
- 1 can (15 ounce) low sodium corn
- 1 jalapeno pepper, diced
- 1/3 cup cilantro, finely chopped
Dressing:
- 1/3 cup extra virgin olive oil
- 2 Tbsp lime juice
- 2 Tbsp red wine vinegar
- Garlic powder, salt, and pepper to taste
What to do:
- After dicing all vegetables and rinsing all canned vegetables, combine ingredients in a large bowl and toss well.
- In a separate bowl, whisk all dressing ingredients
- Pour dressing over salad ingredients and mix. For more flavor, let sit in the fridge for an hour before serving (optional)
- Serve with whole wheat tortilla chips or as a side dish and enjoy!
