Mushroom and Black Bean Tacos

What you'll need:
  • 1 Tbsp. olive oil
  • 2 cup mushrooms, chopped
  • 1 can black beans, drained and rinsed
  • 1 small onion, diced
  • 2 garlic cloves, minced
  • 1 tsp. cumin
  • 1 tsp. chili powder
  • 8 small corn tortillas
  • 1 cup shredded lettuce
  • 1 cup diced tomatoes
  • ½ cup salsa (optional)
What to do:
  1. Prep Veggies - Chop and dice tomatoes, onions and mushrooms and mince garlic. Rinse and drain black beans.
  2. Cook Veggies - Over medium heat place 1 Tbsp. olive oil and sauté onion and garlic for 2 to 3 minutes until fragrant.
  3. Add Mushroom & Beans - In the same pan, stir in mushrooms, cumin powder, chili powder and a pinch of salt. Cook for 5 to 7 minutes until mushroom release liquid and brown. Add black beans and cook for another 2 minutes.
  4. Warm Tortillas - Heat corn tortillas in a skillet or microwave until soft.
  5. Assemble Tacos - Fill tortillas with mushroom and black bean mixture. Top with lettuce, tomatoes and salsa, if using.
