Sheet Pan Chicken Fajitas

What you'll need:
  • 2 tsp. chili powder
  • 1 tsp. garlic powder
  • 1 tsp. smoked paprika
  • 1 tsp. cumin
  • 1 tsp. salt
  • ½ tsp. black pepper
  • 2 tbsp. olive oil
  • 1 ½ lbs. chicken breasts, cut into bite-size
  • 3 bell peppers, cut into strips
  • 1 white onion, medium, cut into slices
  • Optional: 1 lime, juiced
  • Optional: chopped cilantro
  • Optional: ½ cup brown rice, cooked
  • Optional: whole wheat tortillas
What to do:
  1. Preheat the oven to 400 degrees Fahrenheit and pour oil over the baking sheet
  2. In a small bowl mix chili powder, garlic powder, smoked paprika, cumin, salt and black pepper
  3. Add olive oil to the bowl and mix well
  4. Place chicken onto the baking sheet and pour over mixture. Be sure to coat the chicken
  5. Add peppers and onion to baking sheet and combine
  6. Place baking sheet in the oven for 20 minutes or until chicken is fully cooked
  7. Optional: squeeze lime juice over pan and add chopped cilantro
  8. Optional: serve with brown rice or whole wheat tortillas
