What you'll need:
  • 1 lb ground lean chicken 
  • 1 15 oz jar salsa
  • 1/4 cup shredded Mexican-blend cheese, low fat
  • 1 can black beans, rinsed and drained
  • 1 red bell pepper, chopped
  • 1 poblano pepper, chopped
  • 1 can corn, drained 
  • 1 serrano pepper, sliced
  • 1 tomato, chopped
  • 1 avocado, chopped
  • 1/4 cup chopped cilantro
What to do:
  1. Cook the ground chicken in a medium fry pan until cooked through.
  2. Once cooked, drain off fat and stir in 3/4 cup of salsa. 
  3. Top with the remaining ingredients. Serve with blue corn tortilla chips or over a bed of cauliflower rice.
