Tackling Turkey and Tomato Wrap

What you'll need:
  • 1/2 cup red bell pepper, thinly sliced 
  • 4 green onions, chopped 
  • 2 cup spring mix
  • 3 roma tomatoes, chopped
  • 1/4 cup olive oil vinaigrette 
  • 2 ounce cream cheese, low fat 
  • 2 ounce greek yogurt 
  • 8 ounces turkey breast cutlets, cut into 1/2- inch strips 
  • 1/2 tsp.curry powder 
  • 1/2 tsp. cumin 
  • 1/2 tsp. pepper 
  • 4 10-inch whole wheat tortillas
What to do:
  1.  Combine tomatoes, red peppers and green onions in a small bowl. Toss in olive oil vinaigrette.
  2. In a seperate bowl, beat cream cheese, greek yogurt and curry powder until blended.
  3. In a small bowl, combine turkey, oil and remaining seasonings. 
  4. In a large skillet, add turkey mixture; cook and stir until no longer pink. 
  5. Spread 1 ounce cream cheese and yogurt mixture over each tortilla. Near center of tortilla, layer spinach, tomato mixture and turkey. Roll and Enjoy!
