Grilled Vegetables with Harissa Seasoning

What you'll need:
  • ¼ cup extra virgin olive oil
  • 2 Tbsp. fresh lemon juice
  • 2 tsp. harissa powder
  • 1 red bell pepper, quartered, seeded
  • 1 ½ pound yellow squash, trimmed, cut crosswise into ½ inch thick rounds
  • 4 medium zucchini, halved lengthwise, then crosswise
  • 2 large carrots, peeled, trimmed, cut ½ inch thick slices
  • 3 large red onions, sliced in ½ inch discs
  • 3 Tbsp. chopped fresh cilantro
  • Lemon wedges (for garnish)
What to do:
  1. Mix the first three ingredients in a bowl and whisk.  Set aside
  2. Pre-heat grill
  3. Toss cut vegetables into dressing
  4. Grilled vegetables, turning to avoid burning
  5. Flip and cook until tender
